    GGH (Glutamyl hydrolase gamma) protein hydrolyzes polyglutamate sidechains in pteroylpolyglutamates, progressively removing gamma-glutamyl residues to produce pteroyl-alpha-glutamate (folic acid) and free glutamate. Studies indicate GGH's crucial role in modulating the bioavailability of dietary pteroylpolyglutamates and its significance in the metabolism of both pteroylpolyglutamates and antifolates.
