Sodium erythorbate is an orally active sodium salt form of isoascorbic acid. Sodium erythorbate improves the radiation resistance of Listeria monocytogenes. Sodium erythorbate can react with free radicals and reduce oxidative damage. Sodium erythorbate has weak antiscorbic activity. Sodium erythorbate can prevent oxidative discoloration in meat products[1][2].
